CHICKEN IN NAAN POCKETS
INGREDIENTS
- 4 Naan pockets
- 3 tbsp natural plain yoghurt
- 1½ tsp garam masala
- 1 tsp chilli powder
- 1 tsp salt
- 2 tbsp lemon juice
- 1 tbsp chopped fresh coriander
- 1 fresh green chilli, chopped
- 1 lb Chicken (boned and cubed)
- 1 tbsp vegetable oil
- 2 tomatoes
- 8 Onion rings
- ½ white cabbage
METHOD
- 1. Cut into the middle of each naan to make a pocket and set aside.
- Mix together the yoghurt, garam masala, chilli powder, salt, lemon juice, coriander and chopped green chilli. Pour the marinade over the chicken and leave for about an hour.
- Pre-heat the grill on high and then lower to medium. Place the chicken into an ovenproof dish and grill for 15 - 20 minutes until tender and cooked throughout, turning the chicken at least twice. If wished, baste with the oil while cooking.
- Remove from heat and fill the naan with the chicken and then with onion rings, tomatoes and cabbage. Serve.
