BARBECUE CHICKEN WITH FRIED RICE

Sweet glazed chicken and tasty fried rice makes a great, simple meal


INGREDIENTS

 

  • 12 pieces of Chicken, skins scored
  • 2 tbsp of olive oil
  • Jar of barbecue sauce
  • 2 tbsp clear honey
  • 3 to 4 garlic cloves, finely chopped
  • Half of a green pepper, finely chopped
  • 1 onion, finely chopped
  • 1 tsp of minced chilli paste (optional)
  • 225g white long-grain rice
  • salt and fresh ground black pepper
  • 2 tbsp groundnut oil
  • 100g frozen peas, cooked and drained
  • 4 eggs

METHOD

  1. Lightly season chicken as usual and cook for 30 mins or until cooked through.
  2. Whilst the chicken is cooking, add the olive oil to a saucepan to heat and then add the onion and green pepper and fry until they have softened. Then add the jar of barbecue sauce, honey, chilli paste and garlic and simmer for 10 minutes.
  3. Once the chicken is cooked transfer to a ovenproof dish and pour over the barbecue sauce and place in the oven at 180°C/Gas 5 for a further 10 - 15 minutes.
  4. Meanwhile, rinse the rice to wash out excess starch. Place in a medium-sized heavy saucepan. Add 300ml water and season with salt . Bring to the boil, reduce heat, cover tightly and simmer over a very low heat for 15 minutes until the water has been absorbed and the rice is tender.
  5. Spread the rice out on a large plate to cool.
  6. Heat a wok until very hot. Add the groundnut oil and heat through. Add the garlic and stir-fry for one minute. Add the cooled rice and mix thoroughly with the garlic.
  7. Crack the eggs into the rice and add the cooked peas. Stir-fry until the eggs are cooked. Season with salt and pepper.
  8. Serve the barbecue chicken with the fried rice.
